I'm saving my brown eggs from the farmer's market so I don't have to pay the extra $1.50 for cage free eggs at the supermarket this winter.

To freeze whole eggs, crack the egg and beat until just blended, then freeze individually in a muffin tin. Then pop them out and store in a Ziploc bag once frozen. To use, simply thaw in refrigerator.

What do you use your eggs for after freezing them? How does it affect baked goods? I know I make several things that won't turn out if the ingredients aren't just right.It's a great idea, but I just want to know how the after-product turns out!

I just started to freeze eggs that we bought from the farmer's market recently. My guess is that we will use them for scrambled eggs or omelets.
